Banana-Almond Muffins

Yesterday morning, while procrastinating about doing homework, I decided to make some muffins for breakfast while everyone else slept.  We had limited supplies and no walnuts or pecans but I really wanted some Banana-Nut Muffins!

I did a Google search and found this recipe.  It sounded great, but I was lacking a few ingredients.  Now, Tool Lady is wonderful at throwing things together sans recipe...I am not.  At all.  Not only does it stress me out, but my non-recipe-food-experiments never turn out well.  I decided to give it a go regardless.  Not sure if I was just hungry or simply did not want to do my homework, but I dove in and winged it!  Below is what might be a phenomenal recipe in the making :-)  The muffins turned out a little sweet for my taste, but really good none-the-less!  I hope you like them as much as we do!

Ingredients:

1 1/3 cups whole wheat flour

½ cup raw sugar

1 ts baking powder

1 ts baking soda

½ ts salt

¾ cup wheat bran

½ cup sliced almonds

2 bananas, mashed

1/3 cup coconut oil

½ ts vanilla extract

½ ts almond extract

2/3 cup almond milk

Process:

Preheat oven to 375 degrees. In one bowl, stir together the flour, sweetener, baking powder, baking soda, salt, wheat bran, and almonds. In a second bowl, combine the bananas, coconut oil, vanilla and almond extract and the almond milk. Pour the liquid ingredients into the bowl with the dry ingredients and mix together gently. Spoon into a lightly oiled (again, I used coconut oil) muffin pan and bake for 20 minutes. Makes 12 muffins.

Can you believe I didn't take a single picture?!  You'll just have to take my word for it...they looked good, they tasted great and I just might have found a tad bit more courage in the kitchen :-)
